Sheet Pan Salmon Dinner!


SHEET PAN SALMON!

Dinner is soooo easy when it’s made in just one pan! Wow! Seriously, I’ve always made dishes that take multiple pans and tons of dishes to assemble, but this one pan dinner is awesome. No mess. No fuss. Quick and easy!

Needs::

One baking sheet.

Three salmon filets (of equal size so they cook evenly!

1/2 onion, sliced

A handful of Mushrooms- I typically always have Portobello mushrooms on hand.

1 T of garlic, chopped

Salt & Pepper, to taste

3 T Coconut oil (or Olive oil)

2 T bread crumbs.


What I love about this dish is all you really need to do is place your veggies and salmon in a large bowl and toss all in the coconut oil and chopped garlic, salt and pepper. Then set beautifully on baking sheet, lined with foil or silicone mat. Bake at 400 degrees for about 20-25 minutes until salmon is nice and "browned" on top and veggies are cooked through. I prefer my salmon medium in cooking temperature, so sometimes bring this out sooner than most. Regardless, this one sheet pan is easy and delicious with not all the mess.

Serve with a great Chardonnay.
